White Texas Sheetcake

White Texas Sheetcake

  • 1 cup of butter or margarine
  • 1 cup of water
  • 2 cups of flour
  • 2 cups of sugar
  • 2 eggs beaten
  • 1/2 cup sour cream
  • 1/2 tsp almond extract
  • 1 tsp salt
  • 1 tsp baking soda

In a large saucepan, bring butter and water to boil. Remove from heat, stir in flour, sugar, eggs, sour cream, almond extract, salt, baking soda until smooth. Pour into greased 15 1/2 x 10 x 1 jelly roll pan. Bake at 375 for 20-25 minutes until golden brown. Cool for 20 minutes.

While cake is cooling make frosting:

  • 1/2 cup butter or margarine
  • 1/4 cup milk
  • 4 1/2 cups powdered sugar
  • 1/4 tsp almond extract

In saucepan, combine margarine and milk and bring to a boil. Remove from heat. Add remaining ingredients and stir well. Spread over warm cake.

King Ranch Chicken – Susan Heath

KING RANCH CHICKEN

  • 1 chicken, boiled and boned
  • 1/2 lb cheddar cheese, grated
  • 1 can cream of mushroom soup
  • garlic salt to taste
  • 1 sm bag of Doritos
  • 1 sm onion, chopped
  • 1 can Rotes tomatoes, diced
  • 1 can cream of chicken soup
  • Chili powder to taste

Layer Doritos, chicken, onion, and cheese.  Repeat layers.  End with Doritos on top.

Mix soups, Rotel and spices. Pour over Doritos.  

Bake at 375 degrees for 50 minutes.  Serves 12

Breakfast Casserole-Susan Heath

BREAKFAST CASSEROLE from Susan Heath

  • 2 lb sausage
  • 1/2/c milk
  • 6 beaten eggs
  • 1 large chopped onion
  • 6 c rice krispies
  • 5 c grated cheese
  • 2 c cooked minute rice
  • 2 cans of cream of chicken

(I use one can of cream of chicken and one cream of celery)

Optional:  parsley, green chilis

Topping:

  • 1/2 c crushed rice krispies
  • 1/4 c fresh grated parmesan cheese
  • 2 T melted butter
  • 2 T Parsley, green onion, or chilis

Saute sausage and onions, mix in other ingredients.

Mix all and Place in 11 x 13 inch pan

Bake 325 for 45 minutes
