Suzie’s dinner casserole (Memphis)

Suzie is from India and she is friends with Angela in Memphis. They go to church together and she and her husband Nathan had us all over for dinner and this is what she served

Cut up a rotisserie chicken in large bowl

add two cans of corn and one can of peas (drained)

One can of cubed potatoes (drained)

Can of cream of mushroom and can of cream of chicken and half can of water

1 cup of sour cream

1/3 cup of mayonnaise

Tablespoon of Italian seasoning

Salt and pepper

Garlic salt

Stir well and put into either one very large pan pre-sprayed with cooking oil.

Right before cooking, sprinkle the top with panko crumbs or crushed saltines. Don’t be stingy.

BAKE at 400 for 20-30 minutes or bubbling.
